Could you please advise me on how/where to add, delete, edit the data in the “Additional Information” tab on the bottom of product pages? Can it be removed or made to not be the default tab “open”?

That is completely WooCommerce/theme dependent. Either someone else can pipe in, or you can do some web searches for it.
